Ingredients
- 1 cup quinoa rinsed
- 2 cups water or vegetable broth
- 1 zucchini sliced
- 1 yellow squash sliced
- 1 red bell pepper quartered
- 1 red onion sliced into thick rings
- 1 ear of corn husked
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup chopped fresh basil
- 1/4 cup crumbled feta cheese optional
Instructions
- In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil over medium-high heat.
