Ingredients
  

  • 6 large eggs
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/2 cup chopped spinach
  • 1/4 cup shredded low-fat cheese (optional)
  • Salt and pepper to taste

Instructions
 

  • 1. Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray or olive oil.
    2. In a mixing bowl, crack the eggs and whisk them together until well beaten.
    3. Add the diced bell peppers, onions, tomatoes, chopped spinach, and shredded cheese (if using) to the bowl with the beaten eggs. Season with salt and pepper to taste. Mix until all ingredients are well combined.
    4. Pour the egg and vegetable mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
    5. Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the egg muffins are set and slightly golden on top.
    6. Once cooked, remove the muffin tin from the oven and allow the egg muffins to cool for a few minutes before carefully removing them from the tin.
