Meatballs have always been a favorite in my house growing up. They were usually covered in sauce and sitting boldly on top of a pile of freshly plated pasta. I am here to tell you that meatballs are still on the table, even when following a low fat, low calorie diet.
Today, we are bringing back the meatball with a little makeover: Turkey meatballs with Tomato sauce on a bed of zucchini noodles.
Not only does this satisfy the comfort craving of meatballs and pasta, it also includes your vegetables for the day and is still under 300 calories! Want an extra kick? Add red pepper flakes and spinach to your zucchini noodles for an extra boost of veggie and flavor.

Turkey Meatballs with Tomato Sauce
99% Lean Ground Turkey meat 4 oz
Garlic-Cloves Minced 2 medium
Green Pepper, Minced 1 Tbsp
Celery, Chopped 1 Tbsp
Basil, Fresh, Chopped 1 tsp.
Oregano Dried 1 tsp.
Salt & Pepper Dash
Tomato sauce (see recipe below)
Preheat oven to 350* F. Mix ground turkey in a mixing bowl with remaining ingredients until all ingredients have been blended together. Roll mixture into 1 oz meatballs. Cook ½ way through (approximately 25 minutes). Remove from oven and place on a paper towel to absorb excess oil. Yields 6 meatballs, 1 inch in diameter. 160 calories, 30 grams protein, 2 grams fat, 3 grams fiber
Tomato Sauce
Creamy Tomato soup mix 1 pkt
Garlic-Cloves, Minced 4 each
Onions, Diced 3 Tbs
Green Peppers, Diced 3 Tbs
Celery, Diced 3 Tbs.
Bay Leaves, Optional 2 medium
Cayenne Pepper to taste
Salt & Pepper Dash
Cooking Spray As needed
Prepare soup according to package instruction and set aside. Heat a small stock pot on medium heat and spray with cooking spray. Cook garlic, onion, peppers, and celery until vegetables are translucent. Turn heat down to low and add bay leaves, cayenne pepper, salt, and pepper to taste. Add meatballs and finish cooking. Turn heat off, pour in soup and mix well. 137 calories, 15 gram protein, 16 grams carbs, 2 gram fat, 2 gram fiber
