Salmon-Stuffed Avocados

Ingredients
  

  • ½ Cup Nonfat plain Greek yogurt
  • ½ Cup Diced celery
  • 2 tbsp Chopped fresh parsley
  • 1 tbsp Lime Juice
  • 2 tbsp Mayonnaise
  • 1 tbsp Dijon mustard
  • ⅛ tbsp Salt
  • ⅛ tbsp Ground pepper
  • 2 (5 ounce) Cans salmon, drained, flaked, skin and bones removed
  • 2 pcs Avocados
  • Chopped chives for garnish

Instructions
 

  • 1. In a medium bowl, combine Greek yogurt, diced celery, chopped parsley, lime juice, mayonnaise, Dijon mustard, salt, and pepper. Mix well.
    2. Add the drained and flaked salmon to the bowl and thoroughly combine with the yogurt mixture.
    3. Halve the avocados lengthwise and remove the pits. Scoop about 1 tablespoon of flesh from each avocado half into a small bowl.
    4. Mash the scooped-out avocado flesh with a fork and stir it into the salmon mixture.
    5. Fill each avocado half with approximately 1/4 cup of the salmon mixture, mounding it on top of the avocado halves.
    6. Garnish with chopped chives, if desired.

Notes

  • Adjust lime juice, salt, and pepper to taste.
  • Serve immediately for optimal freshness.
  • Consider adding a dash of hot sauce for an extra kick.
