- 2 cups fresh spinach leaves

- 1/4 cup sun-dried tomatoes chopped
- 4 whole-wheat tortillas

- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon dried oregano
