- 1 cup quinoa rinsed
- 2 cups water or vegetable broth
- 1 can 15 ounces chickpeas, drained and rinsed
- 1 avocado diced
- 1 cucumber diced
- 1 cup cherry tomatoes halved
- 1/4 red onion finely chopped
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 clove garlic minced
- Salt and pepper to taste
In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil over medium-high heat.
Reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the liquid is absorbed. Remove from heat and let it cool.
In a large bowl, combine the cooked quinoa, chickpeas, diced avocado, cucumber, cherry tomatoes, red onion, parsley, and mint.
