Ingredients
  

  • 2 cans 15 ounces each chickpeas, drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion thinly sliced
  • 1/4 cup Kalamata olives pitted and halved
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese optional
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, and parsley.
  • In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper to make the dressing.
  • Pour the dressing over the chickpea mixture and toss until well coated.
  • If using, sprinkle the crumbled feta cheese over the salad and gently toss again.
  • Taste and adjust seasoning if needed.
  • Serve the Mediterranean Chickpea Salad chilled or at room temperature.
